Well, it looks like my sweet little family is going to be “snowed” in today a.k.a. we got a lot of ice last night. I can’t lie that I absolutely love snow days! To me it’s an extra day to just stay in your pjs, watch movies, play games, and cook together. One thing we will definitely be doing today is trying out a new breakfast recipe! If you’ve spoken to me in the past couple of weeks then you’re probably aware that if Emma Grace got her way, she would eat Elf’s 3 food groups – candy, candy canes, and syrup. I would, too, if I wouldn’t gain weight…. However, I don’t think the doctor would approve. So, I’ve spent countless hours and days on pinterest searching for healthy breakfast ideas that are tasty and not too complicated to make. The following recipe is for an Acai Bowl. I’ve had a couple of Acai Bowls from different restaurants, but I’ve never been daring enough to try one myself. I’m thinking today might be the day though!

berry beat acai breakfast bowl via gourmande in the kitchen

bowl ingredients:

1 medjool date – pitted and soaked in warm water until soft

1/2 C coconut milk

1 T chia seeds

1 or 2 brazil nuts

1 small raw beet – peeled & finely chopped

1/2 C frozen mixed berries

One 3.5 oz package of frozen acai – run under hot water to thaw

topping:

1T coconut flakes

1T hemp seeds

sliced fresh fruit and berries

instructions:

1. soak the medjool date while peeling and chopping the beet

2. place the coconut milk, chia seeds, brazil nuts and soaked date into a blender & blend until smooth

3. add the chopped beet, frozen berries, and thawed acai packet & blend until smooth

4. pour mixture into a bowl & add toppings

NOTE: this is definitely a recipe you can make ahead of time and store in the refrigerator overnight!
