Happy Cinco de Mayo! It may be rainy here in Dallas, but nothing can stop this preggie momma from celebrating a holiday that involves bright colors, chips & guac, and mexican beer (or O’douls in my case…). Although I have not been able to resist the late night urges for Talenti ice cream or McDonald’s fries, I do try to eat healthy most of the time so when I stumbled on this recipe via pinterest, I did a little happy dance! The Lemon Tree Dwelling has become one of my go-to foodie blogs as of late and I love the replace option she gives for your traditional tortillas: quinoa. I mean, chances are you’ll already have consumed numerous tortilla chips so you might as well be a little healthy, or as one of my good friends says ” try to eat some good with the bad.”

ingredients:
quinoa – as much as you need
taco seasoning (1 packet per 1.5 C dried quinoa)
toppings of your choice – I chose the following:
shredded lettuce
shredded cheese
black beans
tomato
avocado
salsa
queso
sour cream or greek yogurt as a healthier substitute
cilantro
directions:
1. cook quinoa as directed
2. add seasoning to cooked quinoa
3. serve quinoa into bowls & top with desired ingredients
