I don’t know about you, but I love trying new recipes and experimenting with new flavors. This past weekend my husband and I had an impromptu date night and decided to try out some recipes we’ve been eyeing. We stumbled across a picture of this amazing watermelon side/appetizer and gave it a whirl. It is so simple to make and looks oh-so pretty because of all the contrasting colors. We made this recipe as a side, but I think I would serve it as an appetizer in the future because of the small bite size pieces & how easy it is to make.
The recipe consists of watermelon, feta, cilantro, and a serrano pepper. You will be surprised how well all these flavors work together and compliment each other. Even though I like spicy food, I was nervous about this dish for two reasons: 1) watermelon is not my go-to fruit, and 2) I thought the serrano pepper might overwhelm the dish. However, I was pleasantly surprised that the watermelon was the perfect compliment to the pepper and the cheese made both flavors more subdued.
ingredients:
watermelon
feta block
cilantro
serrano pepper
directions:
– cut your watermelon into bite size pieces
– cut your feta into small pieces (about 1/3 of the size of your watermelon piece)
– tear off one cilantro leaf per watermelon bite
– use a mandolin to slice your serrano pepper and put one pepper slice on each watermelon piece (if you don’t have a mandolin, be sure to slice the pepper super thing or just put 1/2 of the pepper slice on your watermelon bite)
NOTE: if you don’t like cilantro, I would try it with mint for a more refreshing taste or basil
