Hey, friend! It has been a hot minute since I’ve posted anything food related in this space. As you are aware, I am by no means a food blogger, but I’ve shared this specific recipe several times on Instagram and it’s quickly become the most requested recipe.
Truth be told, I did not come up with this recipe. My girlfriend actually sent me a screenshot of this recipe via text. I no longer have the text thread so I have no idea who to give credit to. However, you’ll find about a million versions of this on Pinterest. I just thought it might be easy for me to share the recipe I’ve been using here so it’s easy for you to find and refer back to.
I will say, too, that posts like this make me happy for two reasons. One because I know I am fulfilling a direct request from you guys. Serving y’all and encouraging y’all to be the best version of you brings the biggest smile to my face. And secondly, I love posts like this because I do genuinely love cooking in the kitchen. Over the past couple of months the nutrition program I am on has really caused me to get back into the kitchen. I’ve started to get creative with my meals and have gone back to eating and cooking with clean ingredients. So, hopefully I can share some of the things I’m making along the way!
Healthy Cottage Cheese Summer Salad:
- 16 oz cottage cheese
- 3/4 C chopped peppers
- 1/4 C chopped tomatoes
- 1/2 C chopped cucumbers
- 1/2 chopped Avocado (optional)
- 1.5 – 2 T Everything But The Bagel Seasoning from Trader Joe’s
- Mix everything together!
